The Recipe:


Ingredients:


  • Pasilla chile; fried (6 pieces)

  • Fried green tomato (5 pieces)

  • 1 clove of fried garlic and 1/4 onion

  • 1 ounce of Pulque

  • Serrano chiles in vinegar (8 pieces)

  • Oil for frying (to taste)

  • 250 grams of Anejo cheese

  • 2 Tablespoons of Pork Lard

  • 1 Tablespoon of Salt

Procedure:


  • In a hot saucepan, add a touch of lard to get that sizzle going.

  • Once the lard is all bubbly and hot, toss in the green tomatoes, onion, and garlic cloves cut into pieces. Season with salt and watch the magic happen as the tomatoes start to change color.

  • Add the Pasilla chile to the mix and give it a good stir until the chile softens and changes color.

  • Remove the pan from heat and blend all these delicious ingredients together along with a pinch of salt and the Pulque until you get a smooth consistency.

  • In the same pan, fry the salsa until it reaches the perfect texture. If needed, pour in a bit more Pulque and let it simmer.

  • Transfer the salsa to a serving dish, then top it off with cubed Aged cheese and garnish with pickled Serrano chiles for that extra kick!
